Spanish omelette

IF you live alone, or if there are only two of you in the household it is sometimes difficult to find recipes for one or two.

This serves one. Double the ingredients for two people.

 

 

 

Spanish Omelette

1 large potatoes
1 tablespoon oil
1 egg
Salt and pepper to taste
1 tablespoon grated cheese
1 small onion
1 dessertspoon herbs of choice

Heat the oil in a pan. Add the cubed potatoes and cook – covered – for eight-to-10 minutes, or until tender. Note: The potatoes do not need to be browned.

In a bowl, beat the egg with the seasoning. Add the hot potatoes and the herbs. Mix well with a fork.

Add a little more oil to the pan. Pour your mixture into the pan and cook uncovered, tilting the pan occasionally until the omelette is set.

Slide on to the plate, folded. Serve with tomatoes for extra colour if desired.
