The school holidays are almost here – get the children to help you make lunch.

 

Speedy pizza

Serves 4

Base

3 cups self-raising flour
1 dessertspoon oil
½ teaspoon salt
Cold water to mix – around 1½ cups

Topping

½ cup tomato paste
½ cup of water
1 large onion
½ teaspoon oregano
1-2 carrots
100 grams grated cheese
100 grams salami or chopped bacon or ham
Optional
Mushrooms
Capsicums
Olives
2 peeled and grated courgettes
Mashed potatoes

Or any other topping you may like

Prepare the vegetables first. Finely slice the onion, and peel and grate the carrot. Turn the oven on to 210 degrees.

Mix flour, salt and oil in a bowl, using enough of the water to mix to a soft dough. Roll into a circle approximately in diameter.

Spread the base with some of the tomato paste mixed with the water, scatter with chopped onion and oregano. Squeeze the grated vegetables to remove any excess moisture and sprinkle on to the base.

Spread with the remaining tomato paste, then sprinkle with cheese. Add the salami and any other toppings. Place in the oven and bake for around 15 minutes until risen and golden.
